These images focus on Michelin-starred chef Regis Marcon's take on Le Puy lentils. Le Puy lentils are considered by many to be the best lentil because of their peppery flavour and the fact they hold their shape during cooking. They are the only lentil to be identified by area of cultivation – grown in the Le Puy region of France. This set of images shows three different lentil-based dishes by chef Regis Marcon ("tuile de lentilles avec amandes", "ragoût de lentilles vertes de Puy avec truffes et oeuf de poule fumé" and "lentilles vertes du Puy confites à la vanille et gelée d'asperule odorante")
